Yame has been producing some of Japan's finest shade-grown tea for centuries. Its mountain fog, fertile volcanic soil, and high altitude create growing conditions that produce deep color, complex flavor, and distinctive character - even at the culinary grade tier. Sourcing culinary matcha from Yame rather than standard production regions is why Shunju tastes noticeably different from generic latte matchas.
